I have been making these macaroons for a few years now, inspired by a cooking class I attended. Refined sugar free and high in healthy fats, these are a guilt-free treat for your taste buds and body! You can swap the lime zest for any citrus zest or use freeze-dried fruit such as raspberries or strawberries.
Ingredients:
Macaroons
2 cups shredded coconut
½ cup ground almonds
¼ cup coconut oil, melted
1/3 cup pure maple syrup
zest of 2 limes
½ tsp vanilla extract
2–3 tsp cold water
Chocolate Dip (optional)
100g dark chocolate, melted
½ tsp coconut oil, melted
pinch of salt
Method:
• Mix the macaroon ingredients until well combined.
• Form into balls using wet hands, and place onto a tray lined with baking paper.
• Refrigerate for 30 minutes to set.
• Remove from the fridge and drizzle over or dip into the melted chocolate mix.
• Place back into the fridge and allow to set for 12 hours.
• Keep in the fridge for up to a week.
Serve chilled.
