If you would like to have dinner on the table within 15 minutes, then try out this classic dish. It uses minimal ingredients that you've probably already got in your pantry and, unlike other sweet and sour sauces, does not contain pineapple. Serve with your favourite veggies.

INGREDIENTS
700g skinless, boneless chicken thighs or breasts
1/3 cup (75g) brown sugar
1 tbsp cornflour
1/4 cup (60ml) tomato sauce
2 tbsp white wine vinegar or rice wine vinegar
rice and coriander, to serve (optional)
METHOD
Cut the chicken into bite-sized pieces.
Heat a little oil in a large frying pan on high heat. Cook the chicken for about 8 minutes, turning and stirring occasionally, until cooked through.
Combine the remaining ingredients in a jug with 1/2 cup (125ml) water and mix until well combined. Pour the sauce over the chicken and cook, stirring, for a minute or two until the sauce has thickened and is heated through.
Serve with rice, and sprinkle with coriander if using.
