SPICED APPLE MUFFINS


GF, DF, V, RSF


Indulge in these muffins for a nutritious, protein-packed lunchbox filler. Apples are easy to find, affordable and nutritious. Or you can swap the apples for other fruits like tinned pineapple, peaches or pears.


Ingredients:

2 cups ground almonds

1⁄2 cup GF self-raising flour (or self-raising flour if not GF)

1 tsp cinnamon, plus extra for sprinkling

1⁄2 tsp baking soda

3 eggs, lightly beaten

1 x 400g tin diced apples

1 tsp vanilla extract

1 tbsp honey

1/3 cup coconut oil, melted


Method:

• Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.

• Mix all the dry ingredients in a large bowl.

• In a separate bowl, mix the wet ingredients.

• Add the wet ingredients to the dry ingredients and fold until just combined.

• Spoon the mixture into the prepared tin. Sprinkle tops with extra cinnamon if

desired.

• Bake for 15–20 minutes or until golden brown on top.

Cooking Time: 15–20 minutes
