You will be amazed at how flavoursome this four-ingredient recipe is. All the spices and depth of flavour is contained in the chutney, so all the hard work has already been done for you. I am sure this will become a family favourite.
Ingredients: 1kg (2lb) whole boneless, skinless chicken thighs 1 onion, chopped finely 1 cup fruit chutney of your choice 3 tsp curry powder (or more if you like it spicier) salt and pepper to taste
Method: • Place all the ingredients in the slow cooker and stir to combine. • Cook on low for 5 hours, then shred the chicken with two forks while it’s still in the cooker. • Season with salt and pepper to taste. • Serve with rice.
