Soaking nuts and seeds helps to activate them, making the minerals more available for the body to absorb. You can use any nuts, seeds or fruit you have in the pantry. Handy to have on hand for any time of the day. Soak and enjoy! You will also find this recipe in my "Healthy Options" cookbook.

INGREDIENTS
3/4 cup nuts of your choice, roughly chopped
1/4 cup sunflower seeds, roughly chopped
1/4 cup pumpkin seeds, roughly chopped
1/4 cup desiccated coconut
1/4 cup dried fruit (e.g. cranberries and apricots)
2 tbsp chia seeds
500ml unsweetened plant-based milk (e.g. almond, coconut)
METHOD
Combine all the ingredients, except the milk, in a large glass jar.
Pour the milk over the mixture until everything is covered and mix/shake well
Refrigerate overnight to soak.
Serve chilled. Lasts in the fridge for up to a week.
