I just love this recipe. It’s quick and easy to mix together and so versatile. I will often spread the pizza dough prior to cooking with olive oil and salt, then cut into bite size pieces to dip into hummus. Or I top it with olive oil and garlic as an alternative to garlic bread.
Ingredients: 1½ cups self-raising flour 1 cup natural unsweetened yoghurt ½ tsp salt toppings of your choice
Method: • Preheat oven to 220°C (430°F). • Place all ingredients in a bowl and mix until a smooth dough forms. • Tip dough onto a floured surface and knead for two minutes. • Roll the dough out until approx. ½ cm (¼ inch) thick (it can be square or rectangle in shape), place on a greased pizza or oven tray and top with your favourite toppings (try my pizza sauce on the next page). • Bake for 10–12 minutes. • The secret to the success of this pizza is to ensure you bake it in a hot oven. • Makes one large or two small pizzas.
