Pesto is so simple to make and creates a balanced, flavourful sauce for vibrant dishes. Swap the basil for any soft herb and use any nut of your choice. Herbs are nutritious and low in calories so are a great addition to meals. Use as a dip or stuff into chicken breasts to create a delicious evening meal option.
Ingredients:
3 cups basil leaves
1⁄4 cup cashew nuts
zest of 1 lemon
3 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, crushed salt and pepper to taste
Method:
• Put all the ingredients into a food processer and blitz until smooth and creamy.
• Serve chilled. Store in refrigerator for up to 1 week.
Makes: half a cup
