For those of you who are watching their carb intake but crave mashed potatoes, this recipe makes a great substitute.
Ingredients: 500g (1lb) cauliflower florets 4 cloves whole garlic, peeled and smashed
3 tbsp extra virgin olive oil
2 tbsp finely grated parmesan cheese
salt and pepper to taste
Method:
Place the cauliflower and garlic in a steamer over a large pot of boiling water. Steam until tender, approx. 15 minutes.
Place the cauliflower and garlic in a food processor and process, adding the oil in a thin stream, until smooth.
Add the parmesan cheese, and season to taste, pulsing until just blended.
Serves: 3-4 Prep Time: 5 minutes
Cooking Time: 15 minutes
