ORANGE AND ALMOND CAKE



GF, DF, V, RSF

Delight in a cake rich with vitamin C and heart-healthy fats for a balanced indulgence. A handy recipe as oranges are easy to find and are usually available all year round.


Ingredients:

2 oranges

6 eggs

2½ cups ground almonds

1 tsp baking powder

¼ cup pure maple syrup

½ cup runny honey


Method:

• Preheat oven to 160°C (320°F) and grease and line a 22cm cake tin.

• Boil the oranges whole (skin on, green ends removed) in a pot of water for 20–30 minutes. Drain and leave to cool.

• Place the cooled oranges in the food processor and blitz until pulpy.

• Add the remaining ingredients and pulse until combined.

• Tip the mixture into the prepared tin, spreading it out evenly.

• Bake for 50–60 minutes or until a skewer inserted into the centre comes out clean.

• Allow the cake to cool and serve with coconut yoghurt or unsweetened Greek yoghurt.
