The addition of lentils in this recipe makes it more economical and nutritious. A hearty midweek dinner which is ready in 25 minutes. Serve over your favourite pasta.
Ingredients:
2 tbsp olive oil
500g (1lb) beef mince
1/3 cup tomato paste
4 tsp crushed garlic
1 x 400g (14oz) tin lentils, rinsed and drained 1⁄4 cup tomato relish
2 tbsp soy sauce
1⁄2 cup water
salt and pepper to taste
Method: • Heat the oil in a large frying pan over a high heat. • Add the mince and cook until browned. • Add the tomato paste and garlic and cook for a further two minutes. • Add the remaining ingredients. • Reduce heat and simmer uncovered for 10 minutes. • Season with salt and pepper.
Serves: 4 Prep Time: 5 minutes
Cooking Time: 20 minutes
