LUNCHBOX SCROLLS

I won't forget the never-ending struggle to find ideas for my children's lunch boxes that were easy, economical, filling and that were going to be eaten. These scrolls were always very popular and the great thing about them is you can fill them with a never-ending array of ingredients. See the variation ideas below. PREP TIME: 10 minutes

COOKING TIME: 20-25 minutes

MAKES: 12-15


INGREDIENTS

2 cups (300g) self-raising flour

60g cold butter, grated

3/4 cup (180ml) milk

2 tbsp Marmite or Vegemite

2 cups (240g) grated tasty cheese


METHOD


  • Preheat the oven to 180°C. Grease a baking tray and line with baking paper.

  • Sift the flour and a pinch of salt into a large bowl. Add the grated butter and mix until well combined. Stir in the milk with a butter knife until a dough is formed. You may need to add a little extra milk or flour to achieve this.

  • Turn onto a floured bench and knead lightly until smooth. Roll out to a 40cm x 20cm rectangle. Spread with Marmite or Vegemite and sprinkle the cheese over. Working from the long side, roll up tightly.

  • Trim the ends and then cut the roll into 12-15 even slices. Place onto the prepared tray, cut-side up and about 1cm apart.

  • Bake for 20-25 minutes or until golden. Serve warm or cold. Store in an airtight container in the fridge and consume within 2 days. Can be frozen for up to 2 months.

  • Ham or bacon and cheese

  • Ham, cheese and pineapple

  • Pesto or fruit chutney and cheese

  • Pizza sauce and cheese

  • BBQ or sweet chilli sauce and chopped cooked chicken

  • Stewed apple, brown sugar and cinnamon

  • Your own fabulous combo!
