If you’re looking for a vegetarian snack option to serve at your next event, then these will be popular – even with your meat-lover guests. And as a bonus option you can shape the lentil mixture into patties and fry in a little oil. They’re great on their own or in a vegetarian burger.
Ingredients:
1 x 400g (14oz) can lentils, drained and rinsed 1 tsp curry powder
1 onion, grated 1 tsp salt
1 carrot, grated 2 sheets puff pastry, thawed
1 egg milk for brushing pastry
2 tbsp tomato paste
Method:
• Preheat oven to 180°C (350°F) and grease and line a baking tray.
• Place the lentils in a bowl and mash roughly with a fork.
• Add the remaining ingredients, except the pastry and the milk, and mix until well combined.
• Cut each sheet of pastry into two to make rectangles.
• Spoon a quarter of the mixture down the centre of each pastry piece in a log shape.
• Brush one long edge of each pastry piece with milk.
• Lift the other long edge and roll the pastry around the mixture and seal.
• Cut each log into desired lengths.
• Place the pieces seam side down on the lined tray and brush with a little milk.
• Bake for 40 minutes or until cooked through and golden.
Makes: Approx. 20 pieces
Prep Time: 15 minutes
Cooking Time: 40 minutes
