This energy-boosting loaf is jam-packed with dried fruit and nuts and is held together with eggs and flour as opposed to loads of butter or oil. It’s up to you which fruit and nuts you use (some suggestions are raisins, cranberries, apricots, dates, figs, prunes, walnuts, pecans, almonds or hazelnuts). If I’m low on nuts, I sometimes add some seeds instead.
Ingredients:
2 cups chopped dried fruit of your choice
2 cups chopped nuts of your choice
3/4 cup self-raising flour
3/4 cup brown sugar
3 eggs, lightly beaten
1 tsp vanilla extract
Method:
• Preheat oven to 150°C (300°F) and grease and line a loaf tin.
• Combine the dried fruit, nuts, flour and sugar in a large bowl.
• Add the eggs and vanilla and mix until well combined.
• Tip the mixture into the prepared tin and bake for 50–60 minutes or until golden brown and firm to touch.

Cooking Time: 50-60 minutes
