FLASH POTATO MASH


The addition of these extra ingredients will take your humble mashed potatoes to a level good enough to serve at a dinner party. You can also use sweet potato, parsnips or pumpkin as an alternative to potatoes. My daughter-in-law loves this and often requests it when she comes for dinner. Of course, there are never any complaints!


PREP TIME: 10 MINUTES

COOKING TIME: 15 MINUTES

SERVES: 4


INGREDIENTS

800g starchy potatoes (such as Agria), peeled and cut into chunks

1/2 red onion, finely chopped

100g feta, crumbled

1/2 cup finely chopped parsley



METHOD

  • Place the potatoes into a large pot of salted water and bring to the boil. Cook for 10-15 minutes or until tender. Drain well and mash to your liking.

  • Stir through the onion, feta and parsley. Season with salt and pepper to taste and serve immediately.

  • Leftovers can be stored, covered, in the fridge for up to 2 days and reheated in the microwave when ready to consume.
