The addition of these extra ingredients will take your humble mashed potatoes to a level good enough to serve at a dinner party. You can also use sweet potato, parsnips or pumpkin as an alternative to potatoes. My daughter-in-law loves this and often requests it when she comes for dinner. Of course, there are never any complaints!

INGREDIENTS
800g starchy potatoes (such as Agria), peeled and cut into chunks
1/2 red onion, finely chopped
100g feta, crumbled
1/2 cup finely chopped parsley
METHOD
Place the potatoes into a large pot of salted water and bring to the boil. Cook for 10-15 minutes or until tender. Drain well and mash to your liking.
Stir through the onion, feta and parsley. Season with salt and pepper to taste and serve immediately.
Leftovers can be stored, covered, in the fridge for up to 2 days and reheated in the microwave when ready to consume.
