This fresh and healthy salad is full of flavour, and because the dressing is made with yoghurt, it is a lighter alternative to mayonnaise-based dressings. Optional – add a handful of chopped walnuts or pine nuts.
Ingredients: Salad 3 cups shredded cooked chicken 1 celery stalk, chopped into small pieces 1 cup grapes, halved 1 cup chopped mint, parsley and/or coriander leaves
Yoghurt Dressing 2 tbsp plain unsweetened yoghurt 1 tbsp water 1 tbsp olive oil juice and zest of 1 lemon pinch of ground cumin salt and pepper to taste
Method: • Place the salad ingredients in a bowl and gently mix until combined. • Place the dressing ingredients in a small jug and stir until well combined. • Pour the dressing over the salad ingredients and toss until the salad is well coated. • The salad can be served on its own or on a bed of lettuce.
