BERRY SLUMP

Berry slump consists of a berry base with a topping that is a cross between a dumpling and a biscuit. You can use any type of fresh or frozen berries. Serve warm with ice cream or whipped cream.


Ingredients:

4 cups fresh or frozen berries (thawed)

¾ cup sugar

1 cup flour

1½ tsp baking powder

¼ tsp salt

⅓ cup milk

1 egg, lightly beaten

1 tsp vanilla extract

50g (1.8oz) butter, melted


Method:

• Preheat oven to 180°C (350°F) and grease a 6-cup capacity ovenproof dish.

• Tip the berries into the dish and sprinkle over ½ a cup of the sugar.

• Sift the flour, baking powder, salt and the remaining ¼ cup of sugar into a bowl.

• Add the milk, egg, vanilla and butter and mix until well combined.

• Pour the mixture over the berries (it doesn’t matter if the mixture doesn’t cover all the berries).

• Bake for 35–40 minutes or until golden and bubbling.


Serves: 6

Prep Time: 10 minutes

Cooking Time: 35-40 minutes
