BERRY CHIA SEED JAM



I’m totally in love with this jam. This recipe was given to me by my sister-in-law Andrea. The chia seeds swell and become gelatinous, which is what thickens the jam. It’s a healthy alternative to other jams that contain loads of refined sugar, and it’s so easy to make.


Ingredients:

2 cups fresh or frozen berries (raspberries, strawberries or blueberries work well)

2 ½ tbsp chia seeds

1 tbsp water

1 tbsp lemon juice

1–2 tbsp pure maple syrup or honey (or to taste)

1 tsp vanilla extract (optional)


Method:

• Place all the ingredients in a medium-size saucepan.

• Bring to the boil over a medium heat and simmer for a few minutes until the berries have broken down and the mixture has thickened a little.

• Pour the jam into a container and, once cooled, cover and refrigerate. The jam will thicken more once it has cooled. Consume within 2 weeks.


Makes: 1 cup

Prep Time: 5 minutes

Cooking Time: 5 minutes
