I have tried many banana bread recipes over the years, but I always come back to this simple recipe. Make sure the bananas are very ripe to ensure a moist, flavoursome result.
Ingredients: 75g butter, melted 3⁄4 cup brown sugar 2 eggs 1 tsp vanilla extract 1⁄4 cup plain yoghurt or sour cream 2 very ripe medium-sized bananas, mashed
1 1⁄2 cups self-raising flour
Method:
Preheat oven to 180°C (350°F) and grease and line a loaf tin.
Place the butter and brown sugar in a large bowl and whisk until well combined.
Add the eggs and vanilla extract and whisk until well combined.
Add the yoghurt or sour cream and bananas. Mix until well combined.
Sift in the flour and gently mix until just combined.
Spoon the mixture into the prepared tin and bake for 40–50 minutes or until a skewer inserted in the centre comes out clean.
Cool in the tin.
Serves: 10 Prep Time: 10 minutes
Cooking Time: 40-50 minutes
