BANANA BREAD

I have tried many banana bread recipes over the years, but I always come back to this simple recipe. Make sure the bananas are very ripe to ensure a moist, flavoursome result.

Ingredients: 75g butter, melted 3⁄4 cup brown sugar 2 eggs 1 tsp vanilla extract 1⁄4 cup plain yoghurt or sour cream 2 very ripe medium-sized bananas, mashed

1 1⁄2 cups self-raising flour

Method:

  • Preheat oven to 180°C (350°F) and grease and line a loaf tin.

  • Place the butter and brown sugar in a large bowl and whisk until well combined.

  • Add the eggs and vanilla extract and whisk until well combined.

  • Add the yoghurt or sour cream and bananas. Mix until well combined.

  • Sift in the flour and gently mix until just combined.

  • Spoon the mixture into the prepared tin and bake for 40–50 minutes or until a skewer inserted in the centre comes out clean.

  • Cool in the tin.

Serves: 10 Prep Time: 10 minutes

Cooking Time: 40-50 minutes
