ANY WHICH WAY COOKIES


One cookie mixture – so many options. This recipe will become your go-to cookie recipe. They are crisp on the outside and gooey in the middle.


Ingredients: 115g (4oz) butter, melted

1⁄2 cup white sugar 1⁄2 cup brown sugar 1 egg 1⁄2 tsp vanilla extract 11⁄4 cups flour 1⁄2 tsp baking soda 1⁄2 tsp salt


Method:

  • Pour the melted butter into a large bowl.

  • Add the sugars and mix until well combined.

  • Add the egg and vanilla extract and mix until well combined.

  • Sift in the flour, baking soda and salt.

  • At this stage, add your extras (see below).

  • Mix until a dough is formed.

  • Place the bowl in the fridge for 15 minutes to firm up.

  • Preheat oven to 180°C (350°F) and grease a baking tray.

  • Roll the dough into golf-ball-size balls and place on the tray, leaving room for the cookies to spread. Do not flatten them.

  • Bake for 12-15 minutes or until golden.

Extras

2 tbsp each of chopped white chocolate and macadamia nuts, or

1 tbsp cocoa powder and 2 tbsp peanuts, or

2 tbsp chocolate chips, or

2 tbsp each of rolled oats and sultanas, or

1 tsp ginger powder, or

2 tbsp desiccated coconut


Serves: 12 Prep Time: 10 minutes (plus firming time 15 minutes)

Cooking Time: 12-15 minutes
