
Forget about turning your oven on to make toasted muesli. Instead, whip up a batch using a single frying pan. And feel free to play around with the ingredients. You can use chopped nuts instead of seeds, and use any variety of dried fruit. Or try adding some coconut or a teaspoon of vanilla extract for extra flavour.
Ingredients:
60gms (2.1oz) butter or coconut oil
4 tbsp pure maple syrup or honey
3 cups rolled oats
½ cup pumpkin seeds
½ cup sunflower seeds
1 tsp cinnamon
¼ tsp salt
1 cup chopped dried fruit
Method:
• Heat a large frying pan over a medium heat.
• Melt the butter or oil.
• Add the maple syrup or honey, rolled oats, seeds, cinnamon and salt, and stir constantly for approx. 5 minutes or until the mixture is golden and toasted.
• Remove from the heat and add the fruit. Mix to combine.
• When cool, place in an airtight container and use within 2 weeks.
